Cornerstone Cafe (1)What I like about this place is that you can get eggs any way you like them. Literally. They have suggested ways/combos, but you can also essentially create your own omelette, scramble, bake, boil, etc. and add a variety of cheeses/toppings to them.

I got a gorgonzola, tomato and red onion omelette, which comes with potatoes, mixed greens, and choice of toast (whole wheat, white, rye, or english muffin).

The omelette was essentially like the egg version of a calzone. Super thick layer of egg and all the ingredients warmed inside. I wish the ingredients had been just a bit more incorporated into the egg than just being in the form of a wrap, but it was a good portion (3 eggs) and combined with the sides, worked well. The gorgonzola here, though, isn’t good quality and if I did it over again, I probably would’ve opted for feta. Also they went pretty light on the tomatoes and onions.

Many tables got the baked eggs and that’s really what I should’ve tried. They did look good – better than my dish.

Ginger lemonade, which they say is fresh squeezed, most definitely is not. The ginger is fresh, the lemonade is not.

Saturday for brunch, we waited about 20 minutes for a table for 2. Cash only, but they do a really good job of indicating this everywhere, so you’re not surprised.
